I love soup, it’s such an easy and comforting way to get your nutrition in, especially in the cold months. You can sip on the broth, chow down on the chunks, and even dip and dive with a piece of toast or crackers. This soup is a current staple in my home thanks to the complimenting foods that are vegan, soy free, starch free and full of much needed minerals and fiber. Take a look at the recipe and see how easy it is to whip up a warm bowl of soul food that will send positive vibrations of love up and down all of your chakras. The measurements are approximate (as usual) so if you try it, feel free to tweak all you want, that’s what makes home cooked soups special–they are unique, special and different every single time. Here it is!
Ingredients:
- 1/2 cup white onion
- 1/2 cup chopped leeks (the green part is my favorite)
- 1/4 cup chopped celery
- 1/2 cup tomato sauce
- Herbs: parsley, thyme, cilantro, sage, black pepper and salt (about a tsp of dried or small handful of fresh)
- 1/2-1 cup finely chopped kale
- 1/2 cup quinoa
- 1 cup of chickpeas (canned or pre-soaked)
- 1 cup of butternut squash (cubed to your liking)
How to make this warm health potion:
Saute the onions, celery and leeks in a little grape seed oil in your pot. After a few minutes and they appear to be translucent and plump, add in your herbs and tomato sauce. Next add in the squash, chickpeas and kale, along with at least 4 cups of water and bring to a boil. You may need more water, cause again, this is approximate. After it reaches a boil, cover and simmer for about 40 minutes. You can/should check it around 20 minutes and see how it’s doing.
Serve it with your favorite soup adornments. I love cayenne pepper on top of my soups and avocado. The forever cool and fatty smooth texture of the avocado with the kick from the cayenne just sends my taste buds to a vegan heaven, reminding me how delicious cruelty free food can taste. This is a great recipe to use for your non-vegan loved ones, or if you are a meat eater yourself, don’t be scared! Step away from the chicken lol, and give those garbanzos a big hug with your palette and introduce yourself to plant based, soul food.

This ingredient alone is what enabled soul food to sustain generations of individuals who endured spiritual torment and performed back braking work day in and day out.
