Qunioa Oat Blueberry Pancakes

I prefer an earthy heartiness with it’s own natural flavors over a light, fluffy pancake that in my opinion, is slightly bland in taste without any syrup.  I always feel guilty having those, especially first thing in the morning.  When you think about it, all you are eating is white flour, and sugar–no fiber, omega fatty acids, barely any nutrients, and it’s very acidic to your body.  Pancakes are delicious but the old fashioned way doesn’t serve much good to the body.  All it does is fill your belly and spike your blood sugar.  It doesn’t nourish your cells, fill you up with fiber, or fuel your body correctly.  Here I go again, about to go off on a mineral-induced rant, and I didn’t even have Spelt bread yet!

I love Saturday mornings, imageI always wake up optimistic and in the mood for a great breakfast…actually come to think of it, that’s how I wake up most mornings (sarcasm).  I make pancakes often–don’t actually like doing it, but that’s the number #1 request most days for breakfast, lunch and sometimes dinner.  Today I decided to add quinoa and oat flour to the mix, since I used all the spelt flour in the house (those cupcakes were worth it!).  I’ll share my recime with you all in case you want to give it a try but beware:  pancakes are not my strong suit and I rarely measure, which is probably why pancakes are not my strong suite.  They came out delicious, gave us a good amount of protein (whatever that is lol), fiber and had a deliciously nutty, earthy flavor.

Ingredients:

  • 1/4 cup Quinoa flour
  • 1/2 cup Oat flour
  • 1/2 cup regular flour–divided (white, wheat, spelt–whatever)
  • 1 tsp Baking Soda
  • 2 tsps Baking Powder
  • 1/2 tsp Dr Sebi Bromide Plus Powder
  • pinch of salt (actually pinch of a pinch)
  • 1 tbsp ground chia seeds mixed with 3 tbsp of water (egg substitute)
  • 1/2 tsp vanilla extract
  • 1 tbsp sugar (i used coconut)
  • 1/3 cup oil
  • 1 cup almond milk (unsweetened is nice, since you’re probably going to bathe your pancake in Maple syrup)
  • 1/2 cup blueberries (thawed if frozen, and slightly cut up or mashed if fresh if you’re like me)

 

Make the egg substitute first, by mixing the ground chia with water in a small separate bowl.  That omega beauty queen will sit back and wait while the rest is being prepared.  Add all three flours (minus the other half of divided flour) together along with the rest of the dry ingredients.  Next, add your wet and stir just to combine and let it rest while your skillet is heating up.  I ended up adding the rest of my regular flour in to thicken it up, cause mine turned out pretty thin.  I was scared to add in the entire measurement, that’s why i divided it.  Cook and enjoy!

imageIf you have quinoa, simply mill about 1/4 cup of the seeds into a powder.  Do the same for the oats.

I added a few walnuts to mine while they were cooking.  I love adding walnuts to anything that involves maple syrup or chocolate.  I don’t care to eat them plain.image

I enjoyed these without any guilt of indulging in empty calories that would leave me feeling drained and hungry two hours later.  I know that some of these items on the ingredient list may be considered on the pricey side.  Wheat flour is drastically cheaper than quinoa.  However, aren’t you worth it?  Isn’t your health more valuable than what jeans you wear or the color of the bottom of your shoes?  What’s that saying–health is wealth (I think that’s it).

      • lol omg.. I do insist. And I want a true vegan chef’s take on it. We just started making it this summer [with a whoooole lotta tweaking] so I would love to know what we can do to make it better. [selfish, I know..]
