Yesterday I decided to try something different to keep my husband from being bored. He likes cauliflower and has a passion for rice, but currently stays away from it, because, hello, IT’S RICE. So I decided to serve him this Grain–Free Cauliflower, Sultana & Toasted Almond Pilaf that I saw on another great blog, and it looked so interesting and different with delicious potential.
Well, I changed the recipe a tad, being that I didn’t have any curry spice. Instead, I used ground coriander, chili, cumin and ginger. That was the only thing I did different (in addition to garnishing it with some Sriracha Sauce) and I have to give it it’s props, it was really good. The cauliflower did take on the appearance and texture of rice. The seeds and nuts added a nice roasted flavor and crunch, and the sultanas, well they were just perfect(I love anything sweet).
So I tried something new last night and it turned out okay. It’s not a part of the Sebi Nutritional Guide, so I had a cheat day. I think I’m doing pretty good if I consider broccoli and cauliflower a cheat day 🙂 I am going to keep this spice/nut/seed combination in my recipe journal, because it was really, really good. If you are looking to spice things up and try something different, maybe you’ll want to give this a try. Put down the rice cooker for one night and try some cauliflower. Put that Adobo or chicken stock back in the pantry and use some chili, coconut oil, and curry (or coriander in my case) 🙂

I use cauliflower as rice sometimes too because I’ve never cared that much for rice anyway and I love how cauliflower takes on flavors. Might have to give this recipe a try!
Yes, that’s the same way I feel towards rice. I appreciate it, but have never loved it. I never ate it as a child. Try it, it was yummy 🙂
